pour over and drip recipe

single pour over
20g medium fine ground coffee
340g filtered water off boil
3:00 brew time

1. Place your filter your brewer of choice- we like the Kalita Wave.

2. Rinse that nasty paper taste by running a few ounces of hot water through the filter then discard the water.

3. Measure out 20g of medium-fine ground coffee. We've been thoroughly enjoying our Colombia Santa Maria.

4. Load your pour over with coffee and tare the scale out.

5. Using your gooseneck kettle filled with water just off boil, add 50g of water in a circular pattern.

6. At 30 seconds slowly pour in small circles until you reach 160g.

7.  Wait until the brew bed drops below your 160g set point, then continue adding water in 60g pulses.
8. Aim to add water by 2:30 allowing for the drain to put you at a total of 3:00 brew time.

70g medium ground coffee
10 cups filtered water (approx. 1200g)
5:00 brew time

chemex

50g medium-coarse ground coffee
850g filtered water off boil
4:30 brew time

1. Fold filter and place in chemex with three layers on the spout side of the chemex and one layer on the other side.

2. Rinse that nasty paper taste by running a few ounces of hot water through the filter then discard the water.

3. Measure out 50g of medium-coarse ground coffee. we dig using our Guatemala Fuerza de Mujer.

4. Load chemex with coffee atop the scale and tare the scale out.

5. Using your gooseneck kettle filled with water just off boil, add 150g of water in a circular pattern.

6. At 30 seconds slowly pour directly in the center of the brew bed, adding the remaining 700g of water (850g total).

7.  All water should be added between 2:30. and 3:00 allowing for the entire chemex to drain between 4-4:30.

prepare yourself for a friggin' solid cup

aeropress

14g fine ground coffee
210g filtered water off boil
2:00 brew time

1. Place paper filter in bottom cap and twist-lock the aeropress.

2. Rinse that nasty paper taste by running a few ounces of hot water through the filter then discard the water.

3. Measure out 14g of finely ground coffee. we love using something fruitier like Ethiopia Mormora.

4. Discard the rinse water and place aeropress, loaded with coffee on your scale and tare it out.

5. Fill the aeropress with 210 g water just off boil.

6. Stir 3x and place plunger on top of the aeropress, then slightly pulling up to create a suction.

7. At 1:30, take plunger off and stir 3 more times.

8. Plunge that bad bird. total brew time will land around 2:00.

french press

50g coarse ground coffee
750g filtered water off boil
5:00 brew time

1. Preheat vessel with warm water while you prepare the coffee.

2. Measure out 50g of coarse ground coffee. we love using Café de Americas for this method.

3. Discard the rinse water and place french press, loaded with coffee on your scale and tare it out.

4. Fill the french press with half of your filtered water (375g), just off boil.

5. At 1:00 give the press a swirl and add remainder of water (375g).

6. At 5:00, seat the lid and plunge.
