This washed process Peru tastes like milk chocolate covered red fruits and sinks into a delicious huckleberry jam that moves to grape and has a nutty finish. In 2014, a coffee came across our cupping table from our sourcing partners at Sustainable Harvest. Rutas del Inca is headquartered in the Querocoto District of the Chota Province in Cajamarca, Peru. Currently the cooperative has 258 members—30 women and 228 men—throughout 27 communities in the Querocoto, Huambos and Querocotillo Districts. These producers live between 1,800 and 2,400 meters above sea level, in temperatures ranging between 60 and 75 degrees Fahrenheit. Time after time around the table, our roasters were drawn back to this amazing cup. Needless to say, over 6 harvest later we continue to enjoy this wonderful group of producers.
