We roast every week from Monday through Wednesday. While many roasters emphasize ultra-fresh coffee, our beans truly shine after a few days of resting. The sweet spot? Enjoying our coffee within 4 weeks of roasting.

Look for the week number on the bottom of the bag taken out of 52 weeks in the year.

Origin Story

Years ago, coffee from Peru was less valuable because the quality hadn't been discovered. Yet Peru is one of the most biodiverse places on the planet and a top producing origin of certified coffees.

In 2014, our importing relationship with Sustainable Harvest began to blossom after they introduced us to a very young cooperative, Rutas del Inca. Time after time around the table, Aaron (our green buyer) drawn back to this amazing cup. Needless to say, over 8 harvests later we continue to enjoy serving their coffee.

Sustainable Harvest plays a huge role in our ability to continue working with this coffee and we are super grateful. On the cooperative level, they work on improving coffee plantations, increasing production, quality control, application of good agricultural practices, and environmental conservation.
