We roast every week from Monday through Wednesday. While many roasters emphasize ultra-fresh coffee, our beans truly shine after a few days of resting. The sweet spot? Enjoying our coffee within 4 weeks of roasting.

Origin Story

10 years ago, when we began our Limited Release program, a beautiful coffee from Brazil came across our cupping table. It blew our previous notions of lower elevation coffees away. While it was originally intended to be a limited release, Deb kept sneaking boxes of vacuum-sealed magic from Daterra onto pallets and we kept it on as a "secret stash" offering at the roastery. Aaron would roast it once a week, and we'd sell out stupid fast.

Since then Sweet Blue has become a core offering in our lineup and we work to maintain our relationship through a few different importers over the years. Daterra, as a certified B Corp, has a strong commitment to sustainable practices and care for our planet, and has been a consistent producer to work with. They separate their lots by cup characteristics and processing methods before it is vacuum-sealed in 12-kilo bags to preserve freshness.

Daterra's Sweet Blue is comprised of a couple heirloom varieties grown in the Patrocinio region at 1,150 meters above sea level. It is processed using the traditional pulp-natural commonly found in Brazil.
