We roast every week from Monday through Wednesday. While many roasters emphasize ultra-fresh coffee, our beans truly shine after a few days of resting. The sweet spot? Enjoying our coffee within 4 weeks of roasting.

Look for the week number on the bottom of the bag taken out of 52 weeks in the year.

Curious about the roast date? Just ask us. We're always happy to help you experience our coffee at its best.

Origin Story

Notes from our sourcing partners at Ally Coffee:

"Hacienda Cafetera La Pradera in Aratoca, Santander, Colombia. La Pradera’s mission is to strengthen the Santander coffee cluster, contributing positively to the community, and producing coffee in harmony with the natural world.

They also operate Finca Santa Maria which is certified with the Con Manos de Mujer seal, verifying that it was produced by the hard work of women coffee producers. They share the labor of planting, tending, pruning, harvesting, and processing the coffee. La Pradera also involves both locals and visitors in the operations of the farm, inviting everyone to visit and see the hard work that the women of Finca Santa Maria have undertaken."
