We roast every week from Monday through Wednesday. While many roasters emphasize ultra-fresh coffee, our beans truly shine after a few days of resting. The sweet spot? Enjoying our coffee within 4 weeks of roasting.

Look for the week number on the bottom of the bag taken out of 52 weeks in the year.

Origin Story

We were introduced to this coffee after our roaster and licensed Pyromancer, Phelan, wanted to put an Indonesian coffee on the menu. Our friends at Ally introduced us to this coffee and here's a little info provided:

"The semi-autonomous province of Aceh lies on the northern tip of the island of Sumatra, Indonesia’s westernmost island. The country’s archipelago spans over 5,000 kilometers including 17,000 islands and 120 active volcanoes. Coffee varieties grown in Aceh are a mix of legacy seedstock distributed by various waves of government and private interests. More than 100 different genetic varieties of coffee are present in Indonesia and Aceh’s regular rainfall, fertile soil, and moderate temperatures offer the ideal climate for Arabica coffee."

Sumatran coffees are known for being heavy bodied, incredibly earthy, and a cigar-like intensity often times roasted quite dark. This Sumatra on the other hand, was fermented in an anaerobic environment for 25 days before being rinsed and dried! 25 days is an insane amount of time and the cup profile leads with it's intensity and complexity the moment you crack the bag open.
