We roast every week from Monday through Wednesday. While many roasters emphasize ultra-fresh coffee, our beans truly shine after a few days of resting. The sweet spot? Enjoying our coffee within 4 weeks of roasting.

Origin Story

We were able to visit Don Raúl's farm in September 2025, where we walked through the thickest coffee forest imaginable before it opened up to the mountainside where he has his own wet mill located on his farm to process and dry his cherries right next to the coffee shrubs.

In 2014, we were introduced to a cooperative, Rutas del Inca. Time after time around the table, Aaron was drawn back to this amazing cup. Needless to say, over 10+ harvests later we continue to enjoy serving their coffee.

Algrano plays a huge role in our ability to continue working with this coffee and we are super grateful. On the cooperative level, they work on improving coffee plantations, increasing production, quality control, application of good agricultural practices, and environmental conservation.

Don Raúl's farm is located at 2,200 meters above sea level where he processes a selection of varieties suited for his microclimate of Querocoto, Peru. He then processed this lot using using an anaerobic washed method.
