We roast every week from Monday through Wednesday. While many roasters emphasize ultra-fresh coffee, our beans truly shine after a few days of resting. The sweet spot? Enjoying our coffee within 4 weeks of roasting.

Look for the week number on the bottom of the bag taken out of 52 weeks in the year.

Origin Story

We've had a natural processed Ethiopia on our menu since the very beginning dating all the way back to the Harrars of 2010. Since 2022 we've had a difficult time finding a sustainable relationship. Thanks to Algrano, we were introduced to Boledu and Halo Beriti to reintroduce an incredibly clean natural Ethiopia to the menu!

"Boledu Coffee is the operator of washing stations in the Yirgacheffe district (Konga, Gedeb, Aricha) and the Guji district (Hambela, Shakiso and Uraga). They have integrated supply chains with farmer out-growers in both districts and are organically certified, maintaining traceability throughout the supply chain to ensure the best quality. Founded in 2018 by two friends Abiyot Ageze and Mebrahtu Aynalem, the company aims to work with farmers in partnership to showcase the best of their coffee by bringing the best practices for coffee preparation & management to Ethiopia and the regions where we work."

Halo Beriti is situated in the Yirgacheffe District, Ethiopia. Heirloom varieties are grown between 1,980m - 2,210m meters above sea level before being processed using the natural method.
