10 years ago, when we began our Limited Release program, a beautiful coffee from Brazil came across our cupping table. It blew our previous notions of lower elevation coffees away. While it was originally intended to be a limited release, Deb kept sneaking boxes of vacuum-sealed magic from Daterra onto pallets and we kept it on as a "secret stash" offering at the roastery. Aaron would roast it once a week, and we'd sell out stupid fast.

Fast forward to our participation in our first Masterpiece Auction in 2018. Since then, Daterra maintains a staple part of our menu with classic coffees like Sweet Blue and absolute mind-benders like the Masterpiece Auction lots each year.

This Arara variety is a natural hybrid between Yellow Catuai and Obatā varietals standing out as a resistent but truly great tasting varietal.

Whole ripe cherries are placed inside a stainless steel fermentation tank equipped with an airlock valve to allow oxygen to escape. This allows the environment to become completely anaerobic overtime, allowing certain microorganism the perfect conditions for enzymatic reactions to happen inside of the beans.

Arara variety that underwent a 60hr anaerobic natural processing method
